Tahini, your new favorite staple

Maybe many of you have heard of tahini, but have wondered, what is that stuff? It is ground sesame seeds that is made into a paste...and it is delicious. It is super nutritious too! It is a good source of phytosterols, fiber, omega-3s, and antioxidants. So, how to use this stuff, you may ask? It is one of the main ingredients in hummus, so tossing a few tablespoons into chick peas will really boost the nutrition content of your creamy, beany dip. It is also great as a vegetable dip or salad dressing. Below are two more ways to incorporate tahini into your diet!

Vegetable Dip
2 cloves garlic
1/2 c tahini
juice of 2 large lemons
1/4 c water
pinch of cumin
salt to taste
chopped parsley

Crush garlic, and add lemon juice and water. Blend in tahini. Add cumin, salt and parsley and mix. Dip with sliced vegetables for a creamy, savory dip.

Tahini Dressing
1/4 c lemon juice (or more, depending on how much you love your citrus!)
3 tbsp olive oil
2 tbsp tahini
2 tbsp water
1 garlic clove, chopped
salt to taste
ground pepper-- the more the better!

This is so simple. Add all ingredients together in a mason jar, and shake well. Enjoy over cool, crisp leafy greens! (KALE is GREAT too!)
