Brie Fondue Pots

A boiling, hot pot of delicious cheese? Why of course. Sign me up. Unfortunately, most fondues are not gluten-free. Making fondue can be tedious, and take a long time to make. Well that's no fun! Why not make a fondue that's easy, quick, DELICIOUS, and gluten-free? Ok!

This has become one of my favorite meals when I need something to "hit the spot." This always seems to do the trick. Something about a hot pot of cheese is so comforting. And brie, garlic, and truffle oil is such a fabulous combination. A trio of perfection! Gourmet on a weeknight? Bring it on. Being gluten-free doesn't mean you have to give up delicious food.

To those of you who are thinking, "A bowl of cheese for dinner? Why that's not nutritious OR healthy!" Well my friends, I want to take the time to stress this: No snack or meal will make or break a healthy diet. It's your overall habits that matter most.

Eat up my friends, this is too good to miss.

Brie Fondue Pots

Ingredients (per 8 oz ramekin)

-4 oz double cream brie cheese
-4-6 garlic cloves, depending on
how big of a garlic lover you are
-1 tbsp olive oil
-3 tsp Sauvignon Blanc
-Black truffle oil
-Cracked black pepper











Directions

Sautee garlic over low heat in 1 tbsp olive oil until garlic is soft




















While garlic is sauteeing, cut off the rind of the brie and cut into cubes




















When garlic is done, layer brie in the bottom of the ramekin.
Add 1/3 of the garlic and 1 tsp wine.
Do this two more times.




















Bake in oven at 400F for 15-20 min, or until bubbly and a little brown.
Add a few drops of black truffle oil and lots of cracked black pepper




















This goes great with fingerling potatoes and gluten-free bread. Toss in a nice, lemony kale salad on the side and you've got a gourmet meal in less than 40 minutes.

**Also, these are super easy to make ahead of time if entertaining or just busy. Just build the ramekins, stick them in the fridge, and throw in the oven when you need to.
