Superhero Kale Salad

Did you ever dream about being a superhero? I know I always wished I could fly. I used to take plastic grocery bags, hold them over my head like a parachute, and jump off of the back of my couch. Oh, the simpler times.
This salad is a little like that grocery bag parachute. With a little imagination, you too will have the ability to fly. It's full of all sorts of superfoods like kale and chia. Kale is full of so many great things, like vitamins A, C & K, fiber, calcium, iron and all sorts of minerals. Chia seeds are full of antioxidants, omega-3 fatty acids, fiber, protein, and calcium. The salad is also full of heart-healthy garlic and tahini. Tahini contains all sorts of B vitamins, calcium, fiber, protein, and antioxidants. See what I mean about it being a salad for superheroes?
Let's talk about a little food synergy. The lemon juice in the salad is full of vitamin C. Vitamin C works to make iron in your blood easier to absorb for your body. And what in the salad is full of iron? Kale! The lemon juice and kale work wonderfully together as great blood builders for your body.

So dig in, my friends. It's the tasty food version of your daily multivitamin.


Superhero Kale Salad



Ingredients
serves 2
-4 c organic kale
-1 tbsp tahini
-1 tsp olive oil
-1 tbsp lemon juice
-1 tsp chopped garlic
-1 tbsp chia seeds
-2 green onions, chopped
-freshly cracked pepper
-sea salt

Directions
-Wash kale and tear into small pieces.
-Chop green onions and garlic
-Combine all of the ingredients in a bowl and mix




**This salad works great made the night before. The dressing really flavors the kale without making the leaves mushy. Still crunchy, but twice as flavorful!
